Halloween is just around the corner, and with the cooler temperatures and changing leaves come all the flavors of fall. While we are anxiously awaiting the Christmas season here at Peppermint Forest, we enjoy celebrating fall with family, friends and recipes specific to the season. Below is a recipe for Pumpkin Bread just in time for the Halloween weekend. Enjoy!

Pumpkin Bread Ingredients

3.5 cups flour

1.5 tsp salt

1 tablespoon cinnamon

2 teaspoons baking soda

1 tablespoon of ground nutmeg

2 cups sugar

¾ cup honey

½ cup water

1 cup vegetable oil

⅔ cup of pumpkin puree

4 eggs beaten up

Yields: Two 9x5 loaves


Preheat the oven to 325 degrees. Sift all the dry ingredients together. Combine all of the wet ingredients in a large bowl. Slowly incorporate the dry ingredients into the wet ingredients. Grease two 9x5 baking pans and split the mix between the two pans. Bake in the oven for 1 hour to 1 hour and fifteen minutes depending on your oven. You will know the bread is done if a toothpick comes out cleanly. This bread is also great for freezing.
